This dish brings all the bold flavors of fajitas into one comforting and easy-to-make casserole. Juicy chicken, tender bell peppers, and savory spices come together under a layer of gooey melted cheese — perfect for a quick family dinner or meal prep!

🛒 Ingredients:

  • 900g chicken breast, cut into strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, thinly sliced
  • 1 fajita seasoning mix (store-bought or homemade)
  • 2 cups shredded Mexican cheese (or cheddar blend)
  • 1 cup salsa (your favorite kind)
  • 1 cup sour cream
  • 1 cup cooked rice
  • 1 tablespoon olive oil

👨‍🍳 How to Make It:

  1. Preheat Your Oven: Set to 190°C (375°F) and lightly grease a large baking dish.
  2. Sauté Chicken & Veggies: In a large skillet, heat olive oil over medium heat. Cook chicken strips until golden and cooked through (about 6–7 minutes). Add bell peppers and onion, cooking another 4 minutes until tender.
  3. Add Seasoning: Stir in the fajita seasoning and mix everything until coated evenly.
  4. Assemble the Bake: In the greased dish, spread the cooked rice. Layer the chicken and veggies on top. Spoon over salsa and sour cream. Sprinkle the shredded cheese generously over everything.
  5. Bake It Up: Place in the oven and bake for 15–20 minutes or until cheese is melted and bubbly.
  6. Serve: Garnish with chopped cilantro, jalapeños, or avocado slices if desired. Serve hot with warm tortillas or a fresh salad!

💡 Tips:

  • Want it spicier? Add chili flakes or spicy salsa.
  • For a low-carb version, skip the rice or replace it with cauliflower rice.
  • Leftovers? This dish stores well in the fridge for up to 3 days!
